While he would prefer to eat homemade spaghetti and meatballs, a stir-fry can go a long way, too. I find the secret to a good stir fry is threefold: garlic, ginger, and sesame oil. If you have those three components, you are halfway there. My favorite stir fry consists of a boatload of veggies and a protein of some kind.
Last week my husband bought a beautiful filet of salmon from Costco for about ten dollars. We were able to get two dinners out of it. Both of those dinners ended up being stir-fries. Here’s what I did both times:
First, I minced garlic and ginger, and sautéed it in a combination of vegetable oil and sesame oil. (A little bit of sesame oil can go a very long way. It imparts a beautiful roasted sesame note. You can find a smallish bottle for about four dollars. Yes, it is worth it!)
Then, I threw in broccoli florets, strips of yellow and red bell peppers, and halved mushrooms. When the veggies were somewhat cooked through but still retained some texture, I moved them to one side of the pan and put the salmon pieces in. I turned down the heat and put the lid on. After about 10 minutes or so the fish was cooked through. I drizzled low-sodium soy sauce over the fish and veggies, and plated everything up with white basmati rice for my husband and quinoa for me. (The kids would have nothing to do with any of it.)
Now, I don’t profess to be a master of Asian cuisine—I don’t even have a wok. But both times, my husband kept exclaiming how good dinner was, and I have to say, I agreed with him.
